  • Food processor
  • Kitchen Scale (optional)

Ingredients
  

For the Pesto Sauce

  • cup (100g) Pine nuts
  • ¼ cups (60ml) Olive oil (extra virgin)
  • 1 tsp Crushed garlic
  • cup (20g) Nutritional yeast flakes
  • 10 green olives (pitted)
  • 1 cup Fresh basil (packed cup)
  • 1 cup Baby spinach leaves (packed cup)
  • ½ tsp Sea salt
  • ¼ tsp Black pepper

For the Pasta

  • 16 ounces (450g) Vegan penne pasta (measured dry)
  • 20 Cherry tomatoes
  • Parmesan cheese

Instructions
 

  • Cook the pasta according to the instruction on the packaging and drain it.
  • Roast the pine nuts for 5-10 minutes at medium to high for 5 minutes or until they get golden brown. Stir regularly to avoid burning.
  • Take your food processor or a blender and add roasted pine nuts, olive oil, garlic, green olives, basil, nutritional yeast, baby spinach, salt, and pepper to make pesto sauce.
  • Test the taste and add more salt/pepper or both accordingly.
  • Cut the cherry tomatoes into half and roast them in your pan for 5-6 minutes.
  • Pour the pesto sauce over the drained pasta and add the roasted tomatoes.
  • Now mix well to finish the recipe.
  • You can garnish with vegan parmesan and red pepper flakes if you like.
